I’ve been a lazy baker lately… I can’t actually remember the last time I baked something! I think if I made a graph with two lines, one being the amount of times I bake and the other one being how stressed I am, I think we’d be able to see a pattern. It’s a bit of a weird one as baking usually help me with stress levels. It’s one of those things that when you get stuck into you focus only on that and it’s therapeutic, and when it comes to baking you also have something tasty to eat at the end of it. Anyway, I finally got around to making some apple and cinnamon muffins I’ve been planning on making for ages because they incorporate two of my favourite things: pink lady apples and cinnamon.
It’s a simple recipe really (the only type of recipe I do), based on a classic muffins recipe with the addition of cinnamon and apples. Sorry about the Swedish measurements but they are quite simple: 1 dl = 0.1 litres. This is what you need:
125 g butter
1.75 dl sugar
1.5 tsp vanilla sugar or a splash of vanilla essance
1 tsp bicarbonate of soda
4.5 dl flour
1.5 dl milk or cream
For the filling:
0.5 tsp cinnamon
1 tbsp ssugar
For the icing:
Plastic piping bag
12 big muffin cases or 30 small ones
Electric hand mixer
This is how you do it:
Let the butter come to room temperature, then mix with the sugar with your hand mixer. Add the eggs and mix again. Add vanilla and bicarbonate of soda and mix again. Now add the flour and milk and mix carefully, only so that it’s just mixed. Poor into the muffin cases equally.
Peel the apples and cut into wedges and then into smaller pieces. Roll in the sugar and cinnamon and then stick into each muffin. Pop in the oven for 15-20 minutes at 175 degrees fan assisted oven, or 200 degrees in normal oven.
Mix icing sugar and vanilla essence and a small splash of water to make the icing for decoration. Put into a plastic bag and put a small hole in the corner and pipe over the muffins when they have properly cooled down.
That’s it! You’re done! Now all you need to do is make a cuppa and enjoy a delicious apple and cinnamon muffin with vanilla icing. I can’t imagine a better Swedish ‘fika’ than this.
