What goes better together than Nutella and banana? It’s really a match made in heaven I think, and to bake something with them together can’t be anything other than delicious. So when I was asked to take part in Banana Moon‘s blogger challenge of creating something baked with banana I knew exactly what to make: banana and Nutella swirl muffins.
It’s simple really, all you need is a good banana muffin recipe and then add Nutella! This is what I used:
230 grams self raising flour
150 grams granulated white sugar
1/2 tsp salt
2 large free range eggs, lightly beaten
110 grams melted unsalted butter
3 large very ripe bananas, mashed
1 teaspoon vanilla extract
4 tbsp Nutella, at room temp or slightly warm
Pre-heat oven to 180 degrees Celsius. Combine flour, sugar and salt in one bowl, and combine eggs, butter, banana, and vanilla in another bowl. Fold the mixes together and never mind about the lumps, they just make it more delicious! Add the batter to silicon tins, alternatively your muffin tray lined with paper liners. Take a tablespoon of Nutella and put on each muffin. Then take a skewer or a cocktail stick and swirl the Nutella around the muffins. In the oven they go for about 20-25 minutes. Leave to cool for a bit, if you can, before you eat them. Enjoy!
I took these ones to work to have my colleagues judge the result. Therefore it’s now safe to say that they are genuinely delicious and you need to make them! They’re great to do when you have a few ripe bananas left over and who doesn’t have Nutella at home at all times? And if you don’t have any of the other baking ingredients, just put some Nutella on your banana and you have a perfectly delicious dessert!
